Tasting Notes:
- Appearance: Deep, dark garnet color, almost opaque, with vibrant purple tinges around the rim.
- Nose: Aromas of blackberries, black currants, and ripe cherries dominate, with subtle layers of cedar, vanilla, and spices from aging in oak barrels. Hints of tobacco, mocha, and wet earth add complexity.
- Palate: The wine has a lush, full-bodied mouthfeel with a supple texture. It displays ripe, concentrated black fruit flavors, with firm, well-integrated tannins. There are secondary notes of licorice, dark chocolate, and a touch of graphite, leading to a long, satisfying finish.
Food Pairing: Ideal with classic dishes such as grilled lamb, roast beef, or game. It also pairs well with hard cheeses like aged Comté or Parmesan.

Blackberry, blueberry and floral aromas follow through to a full body, tight and chewy tannins and a flavorful finish. Drink in 2023. A château to watch in the future.

The 2016 Chauvin, owned by Sylvie Cazes, has a nicely detailed bouquet with blackberry, iris and bay leaf aromas, more understated than the 2015 Chauvin and perhaps more detailed. The palate is medium-bodied with fine, supple tannin, plenty of slightly tarry black fruit but with great structure and focus on the lightly spiced finish. This may be the best vintage that I have tasted in recent vintages, and it should age with style.
